It&#039;s not quite the same, ground almonds will absorb liquid and make the cakes slightly drier, if you would like to use almonds instead I suggest using flaked almonds.

		<description>I chanced upon your lovely site after looking for a mascarpone icing recipe online.
These cakes wouldn&#039;t hang around very long in my house, but I&#039;d be interested to know if they could be stored for a couple of days. And because it&#039;s mascarpone, would they have to be stored in the fridge (something I don&#039;t like doing with cupcakes because it tends to dry out the cake).

Yes you will unfortunately have to refrigerate them however if you take them out of the fridge and let them come to room temperature they will be just as lovely.

		<description>These look absolutely lovely!  Cherries always remind me of childhood as my grandparents had an enormous cherry tree in their yard and we would spend hours under it, eating more cherries than we brought inside and licking cherry juice from our  fingers.</description>
