		<description>This is a really good idea, and will try this.   I also hate wasting things - and love recycling leftovers too!  

I grow some fruit and veg in my garden and had about 1/2lb. of redcurrants which I wasn&#039;t sure what to do with.  I ended up making a jelly (recipe on my blog) which was actually very nice and had it with a goats cream cheese (which I made from a goat&#039;s yog. that had been in the fridge for a while!) - they went very well together - nice surprise!  I will use the rest of the redcurrants to make some vinegar - thank you.

Made raspberry and redcurrant vinegar last year, added a little sugar. To help dissolve the sugar I boiled the fruit vinegar, got a nice suprise when it cooled down and had turned into jelly.

Kerry the jelly sounds fantastic! I shall give that a go myself.
