Having tried - relatively unsuccessfully - to remove the tops of the eggs with an egg cutter (won't grip the eggshell properly so you have to apply quite a lot of pressure, which puts too much strain on the eggshell and makes it likely to crack) I've found a much more successful method. Place the raw egg into an eggcup so it's fairly stable. Then take a darning needle, place the tip on the apex of the egg and tap it gently with a teaspoon until it makes a small hole in the egg. Then gradually widen the hole with the needle, picking out the bits of shell until you can work with your fingers to remove small pieces of eggshell. Then carry on as above. Works a treat -100% success rate and no wasted eggs! Just in the process of making this.
