"I always enjoy reading your recipes, you are amazingly inventive! I have just read your Duck, Onion and Date Pastilla in which you use tamarind paste. I used to use it but now I prefer to use pomegranate molasses as I think it has a more interesting depth of flavour and gives a very good sweet/sour tang to dishes. (The tamarind paste I used to use was the TRS concentrated paste brand, ready to use but without any additives etc.)" Thank you Diana, great tip about the pomegranate molasses.
