There are just two of us and we always get three or four meals out of a chicken. Breasts; legs in a curry or stew; wings as a lunchtime snack and the carcass to make stock for soup or risotto. This looks wonderful! It reminds me so much of being ill as a child just like you say. My brother and I loved this dish although it was never as beautifully presented and we had lettuce instead of brocolli and normal mushrooms (I don't think you got shittakes in Scotland in those days!). I will definitely make this dish to your recipe as Adam has always been snotty about my version so I think this one will persuade him what a fantastic comforting dish this is.
