I grow some fruit and veg in my garden and had about 1/2lb. of redcurrants which I wasn't sure what to do with. I ended up making a jelly (recipe on my blog) which was actually very nice and had it with a goats cream cheese (which I made from a goat's yog. that had been in the fridge for a while!) - they went very well together - nice surprise! Made raspberry and redcurrant vinegar last year, added a little sugar. To help dissolve the sugar I boiled the fruit vinegar, got a nice suprise when it cooled down and had turned into jelly.
