It's always informative and mainspring to stop in here for a visit. Just yesterday I was thinking to myself, "I know what I shall ask for Christmas this year!" Everyone in the family who asks me what I would like will get the same answer... "Truffle Oil!" It is such a special ingredient, that adds so much exquisite flavour in just a few drops, I'd love to have enough in the larder to allow for more frequent use. Thanks for continuing to share your recipes and beautiful presentations, even now that you are busy feeding 'real' people in Suffolk. This dish looks perfect. I’ve never really thought to combine parsnips and mushrooms before – at least not in a way that amplifies the tastes of both. This dish looks perfect.

For chefs and professional kitchen it's like having that extra pair of hands that yo sometimes wish you could have. For example when I'm making creme anglaise in the TM all I need to do is weigh the ingredients directly into the bowl set the timer and temperature and it cooks and stir it. If I to do that the conventional way I had to stand and stir it for 15 minutes at the cooker, this means I could not do anything other than stirring. With the TM it stirs and I do another task. It's also a very powerful machine that really blends everything well and super fine, this way my soups are really velvety as the taste extends as it's been pureed super fine. I could go on and on it's got so many pro's in the professional kitchen. For home cooks this machine is great as it cooks, blends, steams and do so many things that you need many other gadgets for. It's certainly never going to be a white elephant as you get a two hour cookery demonstration when you purchase a TM. The demonstrators will show you all the jobs the machine can do, it can even kneed bread, very well!! Best pro is that it's not as big as some other machines, takes less space and is very easy to clean and move around. Call Janie at UK Thermomix and she will arrange a free, no-obligation to purchase demonstration for you. https://www.ukthermomix.com/ Happy Cooking Madalene Dear Jill,

You set an example all culinary establishments should strive for and patrons should support. I hope your business is doing well. I especially appreciate the detailed and visually pleasing recipes. We do being our meal with our eyes, don't we! Thanks! A wonderful example of a talented chef creating a outstanding dish from simple, local ingredients while supporting local purveyors. I'm going to try the partnership with thyme, the sweetness offset by the slightly musty, bitterness of the herb. I was lucky enough to taste white truffle in abundance but we were warned against truffle oil as it's often a chemical replica rather than using real truffles. Is there a brand of truffle oil you recommend? Parsnips are such an under-rated vegetable and one of my favourites.
